Ingredients
- 1 cup flour
- 1 cup whole wheat flour
- 2 tbsp cornmeal
- 3/4 tsp salt
- 1 1/4 tsp cinnamon
- 1 tbsp baking powder
- 1 tsp baking soda
- 1/2 cup egg whites (4)
- 3 tbsp honey
- 1 tsp vanilla
- 2 1/4 cup buttermilk
- 1/2 stick butter, melted
Preparation
Step 1
Sift flours, cornmeal, salt, cinnamon, baking powder and soda.
In a blender puree egg whites, honey, vanilla, buttermilk until thoroughly combined. About 30 seconds
Gently whisk the dry and liquid ingredients to form batter.
Makes about 5 cups.
Heat griddle over med-low heat. Grease surface
Makes 8-10 pancakes
