Mushrooms, Fiona's Stuffed

Ingredients

  • 1 tsp olive oil
  • 2 tsp butter
  • 1 small onion minced
  • 1 clove garlic minced
  • 3 tbs chopped walnuts
  • 2 green onions minced
  • 1 1/2 oz feta cheese crumbled
  • 2 oz gruyere cheese grated
  • 24 large mushroom caps
  • Salt & pepper to taste

Preparation

Step 1

Heat olive oil and butter in a large pan over medium heat, sauté onions and garlic until translucent. Turn off heat.

Toast walnuts. Add walnuts and green onions.

Allow to cool for a minute or two, then stir in cheese and add salt & pepper to taste.

Fill mushroom caps with mixture and place on broiler pan, bake at 400⁰ for 3 – 5 minutes (or until mushroom is fully cooked and mixture is melting)
