Italian Sub Stoup

Ingredients

  • 2 Tablespoons Olive Oil
  • 3/4 lb sweet sausage
  • 0.5 lb piece of pepperoni
  • 3/4 lb of diced ham
  • 1 green pepper, cored, seeded, quartered and sliced
  • 1 medium onion, quartered and sliced
  • 1 (28 oz.) can of diced tomatoes
  • Salt and Pepper
  • 6 cups of chicken broth
  • 1 lb curly or elbow pasta

Preparation

Step 1

• Place soup pot on range and heat to medium high heat
• Pour olive oil and sausage into pot
• Brown and crumble the sausage, then drain off excess fat if necessary
• Add sliced Ham and cubed pepperoni
• Cook for 2-3 min, add green pepper and onions.
• Cook for 2-3 min more and add tomatoes and season with salt and pepper.
• Add chicken stock to pot and bring to a boil
• Once boiling, add pasta and continue to cook until pasta is tender
