Cinnamon Raisin Rolls

Ingredients

  • 1 (26.4 oz) package of frozen biscuits
  • 1 cup golden raisins
  • All-Purpose Flour
  • 1/4 cup butter, softened
  • 3/4 cup firmly packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped pecans, toasted
  • 1 cup powered sugar
  • 3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Preparation

Step 1

• Boil some water in a pot
• Arrange frozen biscuits, with sides touching, in 3 rows of 4 biscuits on a lightly floured surface
• Let stand 30-45 min or until biscuits are thawed but still cool to the touch
• In a large bowl, place the dried apricots and pour the boiling water over to cover
• Let stand 10 min, drain well, chop apricots
• Sprinkle thawed biscuits lightly with flour
• Press biscuits together and par to form a 10 x 12 inch rectangle of dough
• Spread softened butter over the dough evenly
• Stir together in a bowl the brown sugar and cinnamon then lightly sprinkle over dough
• Next sprinkle the chopped apricots and pecans over the dough
• Roll up, starting at one end, then cut into 12, about 1 inch thick, slices
• Place rolls into a lightly greased 10 inch round pan or 9 inch square pan
• Bake at 375 degrees for 35-40 min or until center rolls are golden brown
• Stir together 1 cup powered sugar, 3 tablespoon milk and ½ teaspoon vanilla, then drizzle evenly over rolls
