Pork - Tenderloin [Bk] 'Garlic Roasted Mayo

Ingredients

  • 1 12oz. Pork tenderlointlets
  • 5 Tbs Olive Oil
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 cup Romano or Parmesan Cheese
  • 1 cup Parsley
  • 1 Med. whole Garlic
  • 1/2 cup Mayo

Preparation

Step 1

1 Preheat oven to 325°. In long mixing dish or pan combine Parsley, Salt, Pepper & Cheese. Coat Pork tenderloin with oil on all sides & cover w/ Parsley mixture. Place in baking dish w/ 4 tbsp. of oil & bake uncovered for ˜ 45 mins. to an hour.
2 Also, take the 1st layer of skin off the Garlic Bulb & cut off the pointed top. Place in Sm. baking dish w/ 2 tsp. Olive Oil & bake for 45 mins. After 45 mins. let the Garlic cool & squeeze out the garlic like toothpaste. With the fork tines, press the garlic down. Mix with the Mayo well.
3 Remove pork form oven & let cook for 10 mins. Cut into slices & serve w/ tsp. of Garlic Mayo.
