Ingredients

  • 6 hearts of romaine leaves
  • 1 yellow pepper, seeded and cutinto 1-inch pieces
  • 1 red pepper, seeded and cut into1-inch pieces
  • 1 medium seedless cucumber, cut into 1-inch chunks
  • 24 cherry or grape tomatoes
  • 2/3 cup Italian dressing
  • 3 tablespoons chopped flat leaf parsley
  • 1/4 teaspoon crushed red pepper flakes

Preparation

Step 1

1. Stack lettuce leaves 3 at a time and cut into about 1-inch pieces. Keeping the lettuce pieces in stacks of 3, divide between eight 8-inch skewers with the peppers, cucumber chunks, and tomatoes. Place skewers in a reusable plastic container and refrigerate for up to 6 hours.
2. In a small reusable plastic container, combine dressing, parsley, and pepper flakes. Refrigerate for up to 6 hours.
3. Transfer to tailgating. When ready to serve, shake dressing and drizzle over skewers.
