Ingredients

  • 2 boneless skinless chicken breasts
  • 2 1/2 T flour divided use
  • 1/2 t garlic powder
  • 1 T olive oil
  • 2 T butter divided use
  • juice and 1 t zest from 1 lemon
  • 1/3 c chicken broth
  • 2-3 T capers drained

Preparation

Step 1

preheat oven to 400 degrees
cut chicken in half crosswise to make 4 pieces
combine 2 T flour and garlic powder in a ziploc
add chicken and shake to coat
heat oil and 1 T butter in a skillet over med high heat
cook chicken until light golden,2 mins per side
transfer to a baking dish and place in oven
to skillet add lemon juice,zest, broth and capers
in a small cup mix 1/2 T flour and 1 T water-whisk mixture into skillet to thicken the sauce-swirl in 1 T butter
remove chicken from oven and check for doneness
if any juices accumulate in dish whisk into sauce
serve sauce over chicken
p.s.recipe did not say how long to bake the chicken-I think 25 mins or so
