Feta With Blood Oranges, Sesame & Spinach

Ingredients
- 3 tablespoons sesame seeds
- 1 block feta cheese (1/2 pound total)
- 1 tablespoon honey
- 2 blood oranges, plus juice of another, at room temperature
- 2 tablespoons extra-virgin olive oil
- 1/2 tablespoon white wine vinegar
- Salt and freshly ground black pepper
- 2 cups baby spinach leaves

Preparation
Step 1
Preheat oven to 400 degrees. On the stove, toast sesame seeds in a dry, shallow pan until golden brown. Transfer toasted seeds to a plate.
Brush 1 side of feta with honey, then place, honey-side down, in sesame seeds, pressing gently so seeds adhere. Flip and repeat with other side.
Place feta in an aluminum-foil lined baking dish and bake until cheese is warm and has started to soften, 10 minutes.
Meanwhile, remove peel from two of the blood oranges with a very sharp knife, then cut into thick slices.
Make Vinaigrette:
In a small bowl, whisk together blood orange juice, oil and vinegar until emulsified. Season with salt and pepper to taste. Set aside.
In a bowl, toss orange slices with half of dressing. In another bowl, gently toss spinach with most of remaining dressing. To serve, divide spinach and oranges between two plates and spoon a bit of remaining dressing over top. Cut warm feta in half, and place one piece on each plate.
