This recipe is so easy! I thought it was going to hard, so I actually started at 5pm thinking if I messed it up...there was always Chinese or Pizza takeout! =-) I am glad it turned out well. My hubby "the picky eater" kept saying "this is so good". Adam started copying him lol saying "this is good, this is good" lol. So apparently this was a home run and I hope it is for you too!



The pie crust can be bought at Trader Joe's or any all natural food store. I would just make sure that bleach is not in the ingredients of whatever crust you buy. If you want to make a pie crust from scratch you can use the recipe I found here. It is so easy! Pie Crust Recipe I used a food processor to mix my dough!

Ingredients

  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1/3 cup chopped onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 3/4 cups chicken broth
  • 2/3 cup milk
  • 3 cups cut-up cooked chicken. (I make a roasted chicken in the air fryer and use the meat from that.
  • 1 cup of a mix of peas and carrots.
  • 1 package (15 oz) refrigerated pie crusts, softened as directed on box. I use Trader Joe's Pie crust.

Step 1

In 2-quart saucepan, melt butter over medium heat. Stir in flour, onion, salt and pepper. Cook, stirring constantly, until mixture is bubbly; remove from heat. Stir in broth and milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in chicken and peas and carrots; remove from heat.


Pre-heat oven to 425°F. Ease your pie crust into ungreased 9-inch (2-quart) glass baking dish. Pour chicken mixture into crust-lined dish. Place the other pie crust on top and seal. Put about 8 small holes into the crust.


Bake about 35 minutes or until golden brown.
