Macadamia Nut Bars

If using rum=use macadamia nuts, if using bourbon=use pecans.

Ingredients

  • 1 1/4 cups all purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 tsp baking powder
  • 1/2 cup butter
  • 3 slightly beaten eggs
  • 1/4 cup light colored corn syrup
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/4 cup butter, melted
  • 2 Tbsp rum or bourbon
  • 1 1/2 tsp vanilla
  • 1 1/2 cups chopped macadamia nuts or pecans

Preparation

Step 1

For crust, in a medium mixing bowl stir together the flour, 1/2 cup brown sugar and baking powder. Using a pastry blender, cut in the 1/2 cup butter until mixture resembles coarse crumbs.

Press the crust mixture into the bottom of an ungreased 13x9x2" baking pan. Bake the crust in a 350 degree oven for 12 min.

Meanwhile, for filling stir together the eggs, corn syrup, granulated sugar, 1/2 cup brown sugar, the melted butter, rum or bourbon and vanilla. Stir in nuts. Pour filling over baked crust, spreading evenly.

Bake 20-25 min more or until set. Cool on a wire rack. Cut into bars.
