Ingredients
- 1 C cooked brown rice (instant)
- 1 C canned black beans, drained and rinsed
- 1/2 zucchini, chopped
- 1/2 C salsa
- 1/2 avocado, diced
- shredded lettuce
- lime juice.
Preparation
Step 1
Heat rice, beans, zucchini and salsa in microwave for 3-4 minutes. Serve on lettuce, top with avocado and lime juice.
