Chocolate Pudding

Ingredients

  • 1/4 c unsweetened cocoa
  • 1/4 c cornstarch
  • 1/4 tsp salt
  • 2 c unsweetened coconut milk
  • 1/3 c agave nectar
  • 2 tsp vanilla

Preparation

Step 1

Combine 1st 3 ingredients in small saucepan.Gradually stir in coconut milk then add the agave.
Bring to a boil over medium heat stirring constantly.
Cook 1 min or until thickened.
Remove from heat - stir in vanilla.
Pour into 4 1/2 cup ramekins and cool.

4 servings - can top with chopped nuts !
