Ingredients

  • 2 chicken breast cut/pounded into cutlets
  • beer can ck seasoning
  • 2 eggs
  • 1 cup breadcrumbs/panko
  • 1 cup parmesan cheese
  • 1 \4 cup olive oil
  • basil chopped
  • mozzarella sliced

Preparation

Step 1

preheat oven to 400
make ck cutlets- sprinkle with beer can ck seasoning
mix breadcrumbs and panko with parm cheese and pinch of salt
whisk 2 eggs together
heat 1\4 c olive oil
dip each cutlet into egg then breadcrumb mixture, cook in oil 3-4 mins

Pan:
spread red sauce on bottom of dish
arrange ck in pan then spoon on more red sauce
sprinkle with basil
place sliced mozz on ck cutlets
sprinkle with 1\2 cup parm cheese
bake in oven for 12 mins until mozz browns and bubbles
