Potato-Chip Tortilla

Ingredients

  • 3 TBL olive oil
  • 1 white onion, halved & thinly sliced
  • kosher salt
  • freshly grd. pepper
  • 12 lg. eggs
  • 1 8.5 oz bag thick-cut potato chips (abt 10 C)

Preparation

Step 1

preheat oven to 350
heat 2 TBL olive oil in med nonstick ovenproof skillet over med. het
add onion
season w/ S & P
cook, stirring, until soft, abt 8 min
transfer to bowl
wipe out skillet

meanwhile, beat eggs & 1 C water in lg. bowl
season w/ S & P
lightly crush potato chips into egg mixture
let stand, stirring occasionally, until chips are soft, abt 10 min
stir in onion

heat remaining 1 TBL olive oil in skillet over med heat, swirling to coat
add egg mix. & cook until it begins to set, abt 5 min
transfer skillet to oven
bake until eggs are firm & top is golden & slightly crisp, 30 to 35 min

remove from oven
let stand 5 min
slide onto plate
cut into wedges
serve warm or room temp
