Ingredients
- 3 (11.3oz) boxes frozen taco beef & cheese taquitos (El Monterey Cuuncheros)
- 1 (10-3/4oz) can nacho cheese condensed soup, (campbell's)
- 1 (10-3/4oz) can cheddar cheese condensed soup, (campbells)
- 1 (10oz) can diced tomatoes & green chilies (TO-TEL)
- 1 (8-oz) pkg. shredded sharp cheddar cheese
- 1 (8oz) container diced fresh tomatoes (abt 1-1/2C)
- 1 (2.25oz) can sliced ripe black olives, rinsed & drained(lindsay)
- garnish: chopped fresh cilantro
Preparation
Step 1
preheat oven to 450
bake taquitos according to pkg. directions
reduce oven temp to 400
spray 11X7" baking dish w/ nonstick cooking spray
in med. bowl, stir together soups & tomatoes & green chilies
set aside
in prepared baking dish, layer 1/2 of taquitos & 1/2 of soup mix.
repeat layers once
bake @400 for 20 min
sprinkle cheese over top
bake 5 min or until cheese melts
remove from oven
top w/ diced tomatoes & olives
garnish w/ chopped cilantro, if desired.
