Cocoa Peanut Drops

Ingredients

  • 2 cups sugar
  • 1/2 cup unsweetened cocoa
  • 1/2 cup half-and-half
  • 5 tablespoons butter
  • 1 1/2 cups salted peanuts, coarsely chopped
  • 1 cup old-fashioned or quick-cooking rolled oats
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla extract

Preparation

Step 1

Line a cookie sheet with wax paper.

In a medium saucepan, bring sugar, cocoa, half-and-half, and butter to a boil over medium-high heat. Let boil 2 minutes, stirring constantly. Remove from heat and stir in remaining ingredients; mix well.

Drop by teaspoonfuls 1 inch apart onto cookie sheet. Chill for 10 minutes, or until firm. Serve, or store in an airtight container until ready to serve.
