Vanilla Cupcakes

Basic White cupcake recipe. Add other extracts to change up the flavor!

Ingredients

  • 8 tbs butter softened
  • 1 cup plus 2 tbs sugar
  • 2 large brown eggs
  • 1 cup self-rising flour
  • 3/4 cup plus 1 tbs all purpose flour
  • 1/2 cup 2% milk
  • 2 tsp pure vanilla extract or flavor of choice.

Preparation

Step 1

Preheat oven to 350 degrees.
In a large mixing bowl cream the butter and sugar until smooth. Add the eggs one at a time and mix a few minutes before each addition.
Sift the two flours together in a seperate bowl.
Mix the milk and extract together and set aside.
Add 1/3 of the flour to the creamed butter. Now add 1/3 of the milk and keep mixing on low. Repeat these steps until all the flour and milk have been blended into the batter.
Spoon the batter into the cupcake pan, filling about 2/3 full. Bake for 25 minutes until raised and golden brown. Test with cake tester.
Remove and place on wire rack for cooling.
