Ingredients
- 2 2/3 c. sugar
- 1 can solid-pack pumpkin
- 1 c. vegetable oil
- 4 eggs
- 1 tsp. vanilla
- 3 1/2 c. flour
- 1 1/2 tsp. cinnamon
- 1 tsp. salt
- 1 tsp. baking soda
- 1/4 tsp. ground cloves
- 1 1/2 c. coarsely chopped pecans
- 2/3 c. golden raisins
- 2/3 c. raisins
- 2/3 c. dried cranberries
Preparation
Step 1
Beat sugar, pumpkin, oil, eggs and vanilla until well blended. Combine flour, cinnamon, salt, baking soda and cloves; gradually beat into pumpkin mixture until blended. Fold in the nuts, raisins and cranberries.
Transfer to two greased 9x5x3 inch loaf pans. Bake at 350 for 60-70 minutes or until a toothpick inserted near the center comes out only slightly moist.
Cool for 10 minutes before removing from pans to wire rack.
