Waffle Iron Croissant Sandwich

Ingredients

  • 2 croissants (sliced in half)
  • 2 eggs (whisked)
  • 1/4 pound sliced bacon (cooked & crumbled)
  • 1/2 cup shredded cheddar cheese
  • 2 scallions (thinly sliced)
  • salt & freshly cracked black pepper
  • non-stick cooking spray

Preparation

Step 1

Preheat a waffle iron to medium. Spray both sides of the iron with cooking spray.
In a medium bowl, whisk together eggs, bacon, cheddar and scallions. Season with salt and pepper. Pour 1/2 the egg mixture into 1 square of the waffle iron. Place both halves of the croissant into 2 of the remaining waffle squares. Close and cook for 2 minutes. Remove from waffle iron, sandwich egg and croissant together. Repeat with remaining ingredients.
