Malbec Blueberry Wine Sauce

Ingredients

  • FOR THE WINE SAUCE:
  • 2 shallots, finely chopped
  • 1 tsp fresh rosemary, finely chopped
  • 3/4 cup malbec
  • 1 cup concentrated beef broth
  • 1 Tbs marmalade of red currants or raspberries
  • 4 Tbs cold butter, in cubes

Step 1



PREPARE THE WINE SAUCE: in a saucepan, put the shallots, rosemary and wine and cook, at high heat, until reduce to 4 Tbs, add the broth and cook until reduced by half. Add the marmalade, mix to combine and reserve. Reheat when ready to serve and add butter. Drizzle over steaks.
