SPEEDY MINI LASAGNAS

Ingredients

  • 8 lasagna noodles, broken into bite sized pieces
  • 2 tsp olive oil
  • 300 g 300 g extra lean ground beef
  • 1 diced onion
  • 3 cloves garlic
  • 1 tbsp Italian dressing
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 small zucchini (peel on) grated
  • 1 bottle 1 bottle (680 ml) strained tomatoes
  • 4 tsp liquid honey
  • 2/3 ricotta cheese
  • 1/2 cup grated parmesan
  • 1/2 cup chopped basil
  • 1 egg yolk
  • 1/2 cup shredded mozzarella

Preparation

Step 1

Cook noodles according to package.

Heat oil and cook beef and onion and 2/3 of the garlic, italian seasoning, salt and pepper till meat is cooked and onions are softened.

Add zucchini and cook till soft - about 2 minutes. Reduce heat to medium and add tomatoes and honey. Cook till hot. Stir in noodles. Spoon into 4 - 1 1/2 cup ramekins.

In bowl, stir ricotta, parmesan, basil, yolk and remaining garlic. Spoon over noodle mixture. Sprinkle with Mozzarella.

Broil on baking sheet till browned and bubbly. Let stand 5 minutes before serving.
