Ingredients
- 8 lasagna noodles, broken into bite sized pieces
- 2 tsp olive oil
- 300g300 g extra lean ground beef
- 1 diced onion
- 3 cloves garlic
- 1 tbsp Italian dressing
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 small zucchini (peel on) grated
- 1bottle1 bottle (680 ml) strained tomatoes
- 4 tsp liquid honey
- 2/3 ricotta cheese
- 1/2 cup grated parmesan
- 1/2 cup chopped basil
- 1 egg yolk
- 1/2 cup shredded mozzarella
Preparation
Step 1
Cook noodles according to package.
Heat oil and cook beef and onion and 2/3 of the garlic, italian seasoning, salt and pepper till meat is cooked and onions are softened.
Add zucchini and cook till soft - about 2 minutes. Reduce heat to medium and add tomatoes and honey. Cook till hot. Stir in noodles. Spoon into 4 - 1 1/2 cup ramekins.
In bowl, stir ricotta, parmesan, basil, yolk and remaining garlic. Spoon over noodle mixture. Sprinkle with Mozzarella.
Broil on baking sheet till browned and bubbly. Let stand 5 minutes before serving.
