Beer Cheese Chowder

Ingredients

  • 1 1/2 cups small broccoli flowerets
  • 3/4 cups shredded carrots
  • 3/4 cup chicken broth
  • 1/4 cup chopped onion
  • 1/4 cup flour
  • 1/2 tsp dry mustard
  • 1/4 tsp black pepper
  • 2 cups milk
  • 3 oz cream cheese softened,cut into chunks
  • 8 oz fully cooked polish sausage, cut into thin slices
  • 1 1/2 cups shredded cheddar cheese
  • 3/4 cup beer

Preparation

Step 1

In medium saucepan combine broccoli, carrots, chicken broth and onion. Bring to boil then reduce heat. Simmer covered for 8 to 10 minutes. Do not drain, set aside.
Meanwhile in large saucepan, melt butter. Stir in flour, dry mustard and pepper. Add milk, cook and stir until thickened and bubbling. In a mixing bowl stir about 1/2 cup milk mixture with cream cheese, stir until well combined. Stir cream cheese mixture into remaining milk mixture in saucepan. Add sausage, cheese and beer. Cook and stir over low heat till sausage is heated thru. Stir in veges, heat thru.
