Ingredients
- ¾ cup (10 TB) salted butter, softened
- ¾ cup packed brown sugar
- 1/3 cup Biscoff spread
- ¼ cup sugar
- 2 tsp vanilla
- 1 egg
- 1 egg yolk
- 2 cups flour
- 3.4 oz box Instant French Vanilla Pudding mix
- 1 tsp baking soda
- ½ tsp salt
Preparation
Step 1
In a large bowl, cream together the butter, brown sugar, Biscoff, & sugar for 1 to 2 minutes until light & fluffy. Add vanilla, egg, & egg yolk; mix well. In a separate bowl, whisk together flour, pudding mix, baking soda, & salt. Slowly add dry ingredients to wet ingredients & mix thoroughly. Cover dough & chill for 1 hour. Preheat oven to 350. Use a cookie scoop to form into balls about 1½ inch wide. Space balls about 2 inches apart on a greased baking sheet. Bake 10-12 minutes, until lightly browned on top. Allow to cool 5-10 minutes on the baking sheet then transfer to a cooling rack to cool completely.
