  • 4 medium potatoes
  • 1 carrot, finely sliced
  • 1 cup shredded cabbage
  • 1 medium onion, chopped
  • celery rib and leaves
  • pinch of basil, thyme and/or rosemary
  • 1 TBSP butter
  • 4 peppercorns
  • salt to taste
  • optional yogurt

Step 1

Boil 4 cups of water. Wash and slice potatoes and carrot (with skins on). Shred or slice cabbage, chop the onion and celery.

To boiling water, add carrot, potatoes, onion, butter, peppercorns and a tsp of salt. Cook for 1/2 hour or until potatoes can easily be pierced with a fork.

Add cabbage, celery, herbs and cook 20 minutes. run through blender. Add 1 TBSP of yogurt to each serving if desired.
