Ingredients
- 2 large sweet potatoes, well scrubbed
- 2 T. apple cider vinegar
- 2 T. water
- Salt
- Chipotle powder
- Lantana Of Texas (salt-free seasoning salt)
- One 15 - 15.5 oz. (400 - 425 g.) can of black beans
- 1 white or yellow onion
- 1 clove garlic
- Cumin
- Tomatillo salsa
- Fat free plain yogurt
- Avocado (optional)
- 8-10 flour tortillas
Preparation
Step 1
1) Preheat oven to 450F/230C.
2) Diced sweet potatoes into 1/2-in. cubes. Place into a large baking dish. Sprinkle the sweet potato cubes with the water, vinegar, salt, and spices. Place the dish in the oven. Cook 20 - 30 minutes, stirring every 10 minutes.
3) Dice the onion finely and mince the garlic clove. Cook the onion, black beans, and cumin together over low heat in a small pot on the stove.
4) Warm tortillas in a dry skillet over low heat.
5) Assemble tacos: sweet potatoes, black beans, a dollop of yogurt, (optional) avocado slices, and a pour of tomatillo salsa.
