Ingredients

  • 1 qt milk
  • 2 pkg yeast
  • 9 cups sifted flour
  • 1 tsp salt
  • 1 c butter or margarine.
  • 1 1/4 c sugar
  • 2 beaten eggs
  • 3 oz citron
  • 1 lb candied fruit mix
  • 1/2 raisins
  • 2 tsp almond extract
  • 1 tsp mace
  • 1/4 lb chopped almonds

Preparation

Step 1

1. Scaled 1 3/4 cups of milk, let cool thoroughly.
2. Add 2 pkg yeast dissolved in 1/2 cup warm water.
3. Add 3 cups of sifted flour and 1tsp salt.
4. Mix well in large pot and cover. Raise until double in bulk (about 1.5 hours)
IMPORTANT: Oven temp should be 90-120 degrees - Yeast killed at 140 degrees. Will need probe thermometer. Turn oven on and off to maintain proper temp.
5. Scald 1c milk, add 1c butter or margarine. Stir until melted. Cool very well.
6. Combine with yeast mixture.
7. Beat in 1 1/4c sugar and 2 beaten eggs, and 5c flour. Knead dough thoroughly.
8. Coarse chop citron and candied fruit.
9. Add citron, candied fruit, raisons, almond extract, and mace as dough is continued to be kneaded.
10. Knead dough continuously for 30 minutes until elastic.
11. Cover and let raise in large pot until double in bulk (about 5 hours)
12. Grease 6 small disposable, aluminum oaf pans with Crisco.
13. Fill pans half full, cover with plastic lids or LOOSELY with saran wrap, let raise until double in bulk (about 4 hours). Place small pan of water in oven to maintain humidity.
14. Carefully remove saran wrap without moving pans. Bake at 325 degrees, 25-30 minutes until brown. Use cake probe to test center of each loaf. Probe should be dry to indicate done.

6 aluminum, disposable small loaf pans with plastic lids.
