Erin Oprea's Lemon Pepper Cod

Ingredients

  • 2 cod fillets (I prefer the thick end of the fillet)
  • 1 tsp extra virgin olive oil
  • Zest and juice of 1 lemon
  • Lemon pepper seasoning (Trader Joe's makes a good one)

Preparation

Step 1

Dry the cod fillets and rub them with olive oil. Top the fillets with the lemon zest and sprinkle with lemon pepper seasoning as desired. Let the fillets rest in the refrigerator for 15 minutes and then grill for 3 minutes. Top with fresh lemon juice.

Note: This is one of the world's easiest dinners! Two great side options: grilled asparagus and kale salad.
