Erin Oprea's Apple Cinnamon Oatmeal Pecan Crunch

Ingredients

  • 1 cup steel-cut oatmeal
  • 2 1/2 cups water
  • 1 1/2 cups unsweetened vanilla almond milk
  • 1 cup chopped apple
  • 1 T maple syrup/desired sweetener
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 1 handful of pecans

Preparation

Step 1

Spray the inside of a slow cooker with cooking spray and add all of the ingredients except the pecans. Cook on low overnight for about 9 hours (I start it at about 9 pm for a 6 am breakfast). Top with pecans before serving.
