I found this on the internet...my husband always LOVES it!

16 oz can tomatoes
medium onion, cut up
tablespoons snipped cilantro
2 or 3
chipotle peppers and a little adobo sauce
cups chicken broth
pounds cooked chicken breast, cut up, or meat from rotisserie chicken
shredded Monterey jack cheese
avocados, cut up
In blender combine undrained tomatoes, onion, garlic, cilantro, sugar and chipotle peppers with adobo. Cover and blend till nearly smooth. Put mixture into a large pot with chicken broth and chicken. Bring to boiling;cover and simmer for 20 minutes. Put crunched tortilla chips in a bowl with cheese, avocados, and sour cream (omit if desired). Ladle soup over; serve immediately.
