Zeppole con Ricotta

Awesome- very quick and easy- real sweet like the good old days in San Gennaro Feast
Ingredients
- 4 eggs
- 2 cups flour
- 4 1/2 tsp baking powder
- 1/2 cup sugar
- 1/2 tsp salt
- 2 cups whole milk ricotta
- 2 tsp vanilla extract
- confectioner's sugar for dusting

Step 1
1. Place four eggs in mixer and beat for 2 minutes. Add sugar and combine.
2. Add flour, baking powder and salt and mix for one minute.
3. Add ricotta cheese and vanilla extract and mix for another 2 minutes until well combined.
Heat oil to 375 degrees (I use a commercial fryer) and take spoonfuls of dough and gently place into heated oil. Cook for approximately 3-4 minutes turning zeppoles over as needed while cooking.
Remove from oil and let drain (or place on paper towels). Dust with confectioner's sugar and enjoy!!!!
