Ingredients

  • 4

    eggs

  • 2

    cups flour

  • 4 1/2

    tsp baking powder

  • 1/2

    cup sugar

  • 1/2

    tsp salt

  • 2

    cups whole milk ricotta

  • 2

    tsp vanilla extract

  • confectioner's sugar for dusting

Directions

1. Place four eggs in mixer and beat for 2 minutes. Add sugar and combine. 2. Add flour, baking powder and salt and mix for one minute. 3. Add ricotta cheese and vanilla extract and mix for another 2 minutes until well combined. Heat oil to 375 degrees (I use a commercial fryer) and take spoonfuls of dough and gently place into heated oil. Cook for approximately 3-4 minutes turning zeppoles over as needed while cooking. Remove from oil and let drain (or place on paper towels). Dust with confectioner's sugar and enjoy!!!!
