Brisket

3.5 lb brisket – 3 hours, sear on fat side for 5 minutes, then other side. Cook with fat side up to allow juices to flow through meet during cooking. Cook about 1 hour per pound.

Ingredients
- Rub:
- 2 Tbsp Paprika
- 1 Tbsp Chili Powder
- 1 tsp Ground Coriander
- 1 tsp Sugar
- 1 tsp Salt
- 1/2 tsp Pepper
- 1/2 tsp Curry Powder
- 1/2 tsp Dry Mustard
- 1/2 tsp Dried Thyme
Preparation
Step 1
In small bowl, combine above ingredients. Rub on beef brisket, refrigerate overnight. Over medium high heat, sear outside of brisket. Wrap brisket in a foil packet or foil pan with fat side up and cook on side of grill without heat. On opposite side, heat burner at low temperature with pan of water.
