Turkey Quinoa Alfredo

When I have made this, I used leftover turkey and made the Creamy Parmesan Recipe as apposed to using the jarred Alfredo sauce. In addition I prepared fresh Brussels sprouts and quinoa separately. Since everything was cooked, I combined it all together and did not bake it. The flavor combination was really good and this was great to use leftover turkey with.
Ingredients
- 1 cup quinoa
- 1 cup jarred reduced-fat Alfredo sauce
- 1 box Brussels sprouts, thawed and halved
- 1 package turkey cutlets (about 1 pound)
- 1/4 cup grated Parmesan
- freshly ground black pepper
- Chopped fresh parsley
Preparation
Step 1
Heat oven to 350°F. Coat a 2 1/2 –quart baking dish with nonstick cooking spray. Set aside. In a large bowl, stir together quinoa, 1 cup water, Alfredo sauce and Brussels sprouts. Pour into prepared dish. Top quinoa mixture with turkey cutlets, spacing them slightly apart so they do not touch. Sprinkle with grated Parmesan and pepper. Cover with nonstick foil and bake at 350°F for 35 minutes. Carefully remove the foil and bake an additional 15 minutes. Cool for 10 minute; sprinkle with chopped parsley before serving.
