Lime Chicken with Cilantro

Ingredients

  • 3 Tbsp Vegetable Oil
  • 1 Medium Onion, halved and thinly sliced
  • 2 Clove Garlic, minced
  • 4 Skinless – Boneless Chicken Breast Halves, sliced thin
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1/4 cup Lime Juice
  • 1/2 cup Cilantro

Preparation

Step 1

In a large skillet, heat oil over medium-high heat. Add onion and cook until soft, about 3 minutes. Add garlic and cook, stirring 1 minute. Add chicken, salt, and pepper to skillet. Cook stirring occasionally, until lightly browned, about 4 minutes. Stir in lime juice and cilantro. Top with diced jalapenos if desired. Serve in warmed corn tortillas with Monterey jack cheese.
