White Velvet Cake

Moist and velvety. great for cake or cupcakes. I've used this recipe for wedding cakes too.

Ingredients
- 1 box (18.25 oz) white cake mix (I use Pillsbury)
- 1 C granulated sugar
- 1 C + 2 TBLS cake flour
- 1/8 tsp salt
- 1 1/3 C water
- 3 eggs (room temperature)
- 1/2 C melted to butter
- 1 C sour cream
- 1 tsp (pure)vanilla or almond extract (optional)
Preparation
Step 1
In a mixing bowl, put water, extract (if used), eggs, melted butter and sour cream. Mix well with paddle attachment.
In a separate bowl sift or blend together cake mix, cake flour, salt and sugar. Add to wet ingredients.
Mix at medium speed for approximately 2 minutes.
Pour into prepared pans and bake at 325 degrees until a toothpick comes out clean, or with a crumb or two left on the pick.
Bake cupcakes approximately 15 - 20 minutes.
Start checking your cake at 15 minutes, depending on the size of the pans and your oven.
