Zesty Ginger-Tomato Chicken

Ingredients

  • 4 Boneless-Skinless Chicken Breast
  • 2 cans Diced Tomatoes, 1 can drained
  • 2 Tbsp Quick Cooking Tapioca
  • 1 Tbsp Grated Ginger
  • 1 Tbsp Cilantro
  • 4 Cloves Garlic
  • 1 Tbsp Brown Sugar
  • 1/2 tsp Salt
  • 3 c. Cooked Couscous or Rice

Preparation

Step 1

In medium bowl, combine ingredients to make sauce. Place chicken (can be frozen) in crock pot, pour sauce over and cook on low 5 hours. Serve over couscous or rice.
