Campfire Casserole

Ingredients

  • 1 pound lean ground beef
  • 1 small onion, chopped
  • 1 small green bell pepper, chopped
  • 2-15 oz. cans rinsed navy beans
  • 1 cup mild salsa
  • 4 slices cooked crumbled bacon, divided
  • 1 cup shredded 50% light cheddar cheese
  • 2 Quart baking dish

Preparation

Step 1

1. Heat oven to 375 degrees

2. In a large nonstick skillet, cook beef, onion and bell pepper for 10 minutes or until beef is no longer pink and vegetables are softened; drain well.

3. Stir in beans and salsa. Bring to a boil; reduce heat, cover and simmer 10 minutes or until until slightly thickened.

4. Spoon half the mixture into a 2 quart baking dish coated with cooking spray. Sprinkle with half the bacon and half the cheese. Pour the remaining bean mixture over the cheese. Top with remaining bacon and cheese.

5. Bake uncovered, 30 minutes or until bubbly.
