Thai Mushrooms

Ingredients

  • 2 Tbsp butter
  • 1/3 cup green onions, chopped
  • 1/3 cup cilantro, chopped
  • 1 Tbsp fresh ginger, minced
  • 4 cloves garlic, minced
  • 12 oz button mushrooms, sliced
  • 2 Tbsp soy sauce
  • 1/4 cup unsweetened coconut milk
  • 1 Tbsp lime juice
  • 3 cups green beans, cooked

Preparation

Step 1

In a large skillet, heat butter over medium-high heat. Add green onions, cilantro, ginger and garlic to pan. Cook and stir for 1 minute. Stir in mushrooms and soy sauce; cook for 2 minutes. Stir in coconut milk. Bring to a boil; reduce heat. Simmer, uncovered, about 5 minute or until sauce thickens. Remove from heat. Stir in lime juice. Serve as a side dish, over green beans or steamed rice.
