White Chili

Ingredients

  • 3 cans Great Northern beans
  • 3 large potatoes, peeled, diced
  • 1 C chopped onion
  • 1 C celery
  • 1 Tbs. minced garlic
  • 1 10 1/2 can chicken broth (divided)
  • 2 C water (more if needed)
  • 2-3 cooked chicken breasts
  • 2 tsp white pepper
  • 1 tsp Tabasco sauce
  • 2 tsp ground cumin
  • salt to taste
  • 1 C half & half (optional)
  • 3/4 C grated cheddar cheese

Preparation

Step 1

In large pot combine potatoes, onion, garlic, 1/2 can chicken broth, and 2 cups of water. Bring to a boil, reduce heat, cover, and simmer about 30 minutes. Add chicken pieces and remaining broth, season with pepper, Tabasco, cumin, salt, 3 cans of beans, cream, cheddar, and water if needed. Cook 2-3 hours. Serve with sour cream, onions, jalapenos, and extra cheddar if desired.

Ashley doesn't include the salt, half and half, celery, cheese or potatoes and it is wonderful and very healthy!!
