Ingredients
- 8 oz tube pasta (or any type)
- 14 oz can artichoke hearts, rinsed and quartered
- 9 oz pkg frozen spinach, thawed
- 2 T margarine (may use lo fat)
- 2 T flour
- 1 C milk
- 1/4 C grated parmesian (1 ounce)
- 2 C grated mozarella
- Pepper
Preparation
Step 1
- Cook pasta according to directions
- Melt margarine in small saucepan; place flour and milk in a covered container and shake well combined; add slowly to melted margarine; cook and stir until thick
- Drain pasta; return to pot; add artichokes, white sauce, parmesian, half of the mozarella, 1/4 tsp pepper, and however much spinach you like (1/2 - 3/4 for us)
- Transfer mixture to 8X8 sprayed broilerproof dish; sprinkle with remaining mozarella; broil until cheese is slightly browned (2 -3 min.)
