Ingredients

  • 1 lb spicy, bitter greens such as mustard or dandelion greens or spinach if you prefer
  • salt
  • 2 T olive oil
  • 1 med. onion
  • 3/4 to 1 lb veggie sausage, chopped or crumbled
  • 1/2 C vegetable stock
  • 2 T cider or wine vinegar
  • sprinkle of sugar
  • salt and freshly ground black pepper
  • nutmeg, freshly grated

Preparation

Step 1

Heat pan with a few inches water over medium heat. Bring to boil, season with salt to taste, and add the greens. Cook for a few minutes, then drain and reserve.

Heat the olive oil in a large skillet over med to med-high heat and add the onions and cook until they begin to soften. Add the sausage and brown, allowing the onions to get completely soft and slightly golden. Stir in the stock and add the greens. Heat through for a few minutes, then add vinegar, and season with sugar, salt, pepper and nutmeg to taste. Transfer to a serving bowl and serve.
