SAUSAGE - Sausage Gravy

Ingredients

  • 1 package Maple Leaf sausage meat, in the roll
  • 3 tablespoons flour
  • pinch of dried thyme
  • 2 cups 2% milk
  • pinch of salt, if needed
  • lots of freshly ground black pepper
  • pinch of grated fresh nutmeg

Preparation

Step 1

Fry the sausage meat in a skillet, breaking it up as you go, until it is crispy and has rendered it's fat. Drain through a sieve, retaining 3 tablespoons of the drippings.

Return the drippings to the pan and add the flour and the thyme. Cook out the roux for a few minutes then start adding the milk, 1/4 to 1/3 at a time, whisking well until smooth before adding more.

Once all the milk has been added, return the sausage to the pan, along with the salt, pepper and nutmeg and keep warm on a low simmer until ready to serve. (You may need to add additional milk to maintain desired consistency)

Serve over hot baking powder biscuits
