Ingredients

    cup butter

  • 1 1/2

    cups white sugar

    eggs

    cup buttermilk

    fluid ounce red food coloring

    tsp. vanilla extract

  • 1 1/2

    tsp. baking soda

  • 1

    tbsp. distilled white vinegar

  • 2

    cups AP flour

  • 1/3

    cup unsweetened cocoa powder

  • 1

    tsp. salt

  • Butter Frosting:

  • 1/3

    cup butter

  • 1/4

    tsp. salt

  • 1

    tsp. vanilla extract

  • 3 1/2

    cups powdered confectioners sugar

  • 3-4

    tbsp. milk or cream - to make smooth and spreadable

Directions

1. Preheat oven to 350. Makes 18 muffins. Grease 18 cups and/or line with paper baking cups. 2. In a large bowl, beat butter and sugar with an electric mixer until light and fluffy. Mix in the eggs, buttermilk, red food coloring, vanilla. Stir in baking soda and vinegar. Combine flour, cocoa powder and salt. Stir into the batter just until blended. Spoon batter into prepared cups, dividing evenly. 3. Bake until tops spring back when lightly pressed, 20-25 minutes. cool pan over wire rack. Combine ingredients for butter frosting and frost cupcakes when cooled.
