Ingredients
- 2 tablespoon of olive oil
- 1/2 of a large onion, diced
- 2 medium carrots, peeled and diced
- 3 cloves of garlic, minced
- 1/2 cup pesto
- 1 teaspoon of salt and freshly ground black pepper to taste
- 19 oz Hot Italian Turkey Sausage, casings removed
- 1 quart low-sodium chicken broth
- 1 28 oz can of crushed tomatoes
- 1 12 oz can diced tomatoes
- 1 9oz package of fresh cheese tortellini
- 4 cups of baby spinach
- grated Romano cheese

Start by sautéing carrots and onions in olive oil over medium heat until they start to soften, 5-8 minutes.
Add garlic and sauté about a minute more.
Add salt and pepper.
Increase heat to medium high and add turkey sausage, breaking up as it cooks.
Once sausage is cooked through, add chicken broth and canned tomatoes.
Bring to a boil, then turn down to a simmer.
Add tortellini and let simmer gently until cooked through, about 5-8 minutes.
Remove from heat and stir in spinach.
Serve in bowls and top with cheese.
