- 1/3 cup cider vinegar
- 1/3 cup water
- 2 tbsp. sugar
- 3/4 tsp. salt
- 1/2 tsp. dry mustard
- Pinch of ground cloves - be very careful!!
- 32 oz. sliced beets - steamed if from garden - aldente
- 1 medium onion, sliced
Prepare 4 hours or a day before serving.
If using fresh garden beets, slice and steam to aldente.
In medium bowl, mix well - vinegar, water, sugar, salt, mustard, cloves. Add beets and onions - toss to coat well. Cover and refridgerate at least 2 hours to blend flavors, tossing beets occasionally. Makes 12 servings. About 55 calories per serving.
