  • 1 butternut squash peeled & cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1/4 cup pure maple syrup
  • Sea salt & freshly ground pepper
  • 3 tbsp dark brown sugar
  • Juice from 1 lemon ,

Preparation

Step 1

Preheat oven to 400.
In a mixing bowl, combine squash, oil & syrup.
Sprinkle with s&p to taste.
Spread out squash on parchment lined baking sheet
Cover with foil & bake for 20 min
Remove foil & sprinkle with brown sugar & lemon juice
Toss gently on baking sheet & bake 20 more min uncovered until squash is tender & golden brown
