Ingredients

  • 2 cups fresh cranberries, sliced in half
  • 2 cups flour;
  • 1 cup sugar;
  • 11/2 tsp baking powder;
  • 1 tsp salt;
  • 1 tsp vanilla;
  • 1/2 tsp cinnamon;
  • 2 TB veg oil;
  • 2 TB grated orange peel;
  • 1/3-1/2 cup orange juice;
  • 1 egg, beaten;
  • 1/2 cup chopped nuts.

Preparation

Step 1

1. preheat oven 350.
2. combine flour,sugar,baking powder,salt and cinnamon.
3. In a 3/4 measuring cup combine oil, peel and vanilla. add enough orange juice to fill the measuring cup.pour into mixing bowl. Add egg and beat til blended,
4. Make a well in the center of dry ingred, Add wet ingred and stir. fold in cranberries and nuts. pour into 1 large greased loaf pan. bake 50-60 min
