Ingredients

  • >6 lb. or less chicken
  • 1 big lemon
  • 1 bulb/head garlic
  • fresh thyme or rosemary
  • 2 teaspoons kosher salt (if you'd like it as salty as the ones in the store, add another 1 tsp.)
  • 1 teaspoons paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • pinch of chili pepper (probably not necessary)
  • 4 whole garlic cloves (optional)
  • 2 tsp Old Bay Seasoning

Preparation

Step 1

Wash chicken-pull giblets out- salt inside & pepper
Cut lemon in quarters, garlic head in half - stuff in chicken with thyme or rosemary
Salt & pepper outside
In a bowl, combine all of dried spices. Rub the spice mixture all over the bird, inside and out. Plop the bird breast-side down into the Slow cooker bag
Quarter potatoes -lay on bottom Carrots in 2 in. sections -on bottom
NO SOUP added - natural juices are plenty
On high 3 hours - then low/high alternate - go for 7 hours total
Pour off juices - make gravy
