Mediterranean Meatloaf (Prosciutto wrapped)

Ingredients

  • 1 lb ground pork
  • 1 lb ground beef
  • 4-6 oz prosciutto sliced medium
  • 1 large eggs
  • 1/2-1 cup grated parmesan
  • 1/4-1/2 cup breadcrumbs
  • 2 tsp chopped garlic ginger paste (ok if you don't have the ginger)
  • 1/4 cup chopped onion
  • 1 tsp cilantro
  • 1 tsp chopped mint
  • 1 tsp coriander
  • 1 tsp cumin
  • 2/3 Tbsp chopped pistachios, almonds or cashews
  • 3/4 tsp salt
  • 1/4 tsp ground cloves
  • 1/4 tsp ground cinnamon
  • 1/4 tsp Hungarian paprika
  • 1/4 tsp ground cardamom
  • 3/4 cup dry white or rose wine (I've used merlot)

Preparation

Step 1

Preheat oven to 400. Grease a large 9X13" low sided baking dish with EVOO. Place prosciutto slices crossways, overlapping a bit using one on left and one on right, meeting in the middle of the pan bottom leaving no gaps, with 3 inches or so hanging over the side.

Mix all othet ingredients in large mixing bowl. Shape into oval and place in baking pan. bring the prosciutto slices up over the top so that the meat loaf is sealed. Remainign prosciutto can be placed in any spot that looks weak or saved for another time. (note: for added flavor, let mixture sit in bowl in fridge overnight to let flavors meld)

Cook uncoeverd for 15 min; then pour wine around meat and cook another 30 min. Remove from oven and let rest for 10-15 min.
