    lb. Boneless New York Strip Roast

    tbsp. seasoning rub of your choice (such as Kowalski’s North Woods Grill or Prime Rib Seasoning), to taste

    tbsp. cooking oil or butter, or combination

  • horseradish sauce, for serving

Serves 6 Rub roast on all sides with seasoning. In a large oven-safe skillet over medium-high heat, heat oil until shimmering but not smoking. Sear roast in hot oil on all sides until well-browned (about 1-2 min. per side), finishing fat side up. Move skillet to a preheated 350° oven; bake until desired temperature: Remove from oven and cover with foil for 20 min. before slicing and serving. (Roast will increase 5-10° as it rests.) Serve with horseradish sauce.
